- 2 tsp ghee or coconut oil
- 1 medium onion chopped
- 1 tbsp ginger root fresh, finely chopped
- 3 cups carrots chopped
- 1 medium potato (Kapha types) or sweet potato (Vata/Pitta types), chopped
- 8 cups water
- salt to taste
- (optional) dash nutmeg or cinnamon
- (optional) fresh parsley or cilantro, chopped

Instructions
- Heat oil in a large pot; add onion and ginger, and sauté, stirring just until onion is translucent.
- Add carrots, potato and vegetable stock or water. Bring to a boil, cover, reduce heat and boil gently until the vegetables are tender, about 30-45 minutes.
- Puree the soup in batches in a blender or food processor.
- Add salt to taste and flavor with cinnamon or nutmeg. Serve plain or garnished with chopped cilantro or parsley.
